Natural Wines
In recent years, more and more people have been talking about “natural wines”.
Certainly the official definition "Natural Wine" hasn`t been legally defined and it is not clear but, in order for a wine to enter this category, some basic things should be observed. Natural wines are those with minimal intervention. "Natural Wine", means different things in different countries but when used, refers to wines which fulfill most of the following criteria: manual harvesting and sorting, organic or biodynamic cultivation, fermentation with indigenous yeasts, without the addition of enzymes or other oenological additives, no technical processing such as stabilization or filtering and most of all without additional sulfites.
"Nothing added, nothing taken away’ is the natural winemakers" mantra.
